新的生茶口感猛烈,大多数人不敢多喝,都将其储放若干年后,用时间去沉淀,用岁月去唤醒,待茶汤变得顺滑、醇厚再品饮。至于储放多少年才开始好喝,很难给出统一回答,一般储放2年已经不同于当初,但要达到好喝的口感可能至少需要6年或更多的时间。

需要注意的是,不仅仅是时间,空间等其他因素,诸如温度、湿度、存放环境、包装状况等等,同样影响生茶的转化。就同一饼茶而言,在相同的时间内,南北差异也很明显,存在南方的就比存在北方有更多的变化,汤色更趋于红亮,口感也更好。实践中发现饼茶的外包装是否透气,对后发酵的影响也很大。
