新的生茶口感猛烈，大多数人不敢多喝，都将其储放若干年后，用时间去沉淀，用岁月去唤醒，待茶汤变得顺滑、醇厚再品饮。至于储放多少年才开始好喝，很难给出统一回答，一般储放2年已经不同于当初，但要达到好喝的口感可能至少需要6年或更多的时间。

需要注意的是，不仅仅是时间，空间等其他因素，诸如温度、湿度、存放环境、包装状况等等，同样影响生茶的转化。就同一饼茶而言，在相同的时间内，南北差异也很明显，存在南方的就比存在北方有更多的变化，汤色更趋于红亮，口感也更好。实践中发现饼茶的外包装是否透气，对后发酵的影响也很大。
